Personal Fave Alert! This is so incredibly delicious, and we do not always have it in stock, so grab it while you can... this is from the same Piemontese producer that brings us our top-selling La Tur. A blend of Cow and sheep's milk, it tastes like an earthy, mushroomy, milky refined Italian Brie.
MILK: Pasteurized cow and sheep's milk
TASTING: Sweet, velvety paste is juxtaposed by a mild bloomy rind that is thinner and milder than the rind of brie, but with enough toothsome texture to keep it interesting.
SERVING: As a wonderful soft cheese on your cheese board along with charcuterie. Or for cooking pasta: toss with fettuccine, brown butter, and fresh truffle (or a dab of truffle sauce available at the Bottle Shop).
PAIR WITH: Franciacorta Italian sparkling, Gavi whites or lighter Piemontese reds such as Dolcetto and Barbera.
