Caparzo owner Elisabetta Gnudi Angelini created this new Chardonnay IGT in 2013. It is produced with grapes coming from three estates she owns in Tuscany : Caparzo, Borgo Scopeto, and Doga delle Clavule. The historical family crest perfectly epitomizes the three estates: three roses on a shield that stand for the three wine cellars.
The different grape varieties are fermented separately for 15-16 days at a temperature of 16-18°C (60-64° F). The fermentation of a part of the Chardonnay is stopped so that it has 3/4 g of residual sugar, and there is no malolactic fermentation performed (which maintains the wine's crispness and freshness. California Chardonnays for example often receive malo to give that ultra creamy texture which in turn covers up the freshness of the wines).
Look for rich tones of color ranging from straw yellow to gold that are deep and bright. The wine has intense and elegant aromas, with fruity notes of apricot, ripe pear, and exotic fruit. The flavors are ripe, aromatic, classic Chardonnay, and a little racy, giving this white excellent energy and vibrancy.
