The renewal of Maison Collery has been a long journey based on strong convictions to reveal the most true expression of champagne terroirs and the ambition to make great wines. Collery is above all a story of passion, which connects man to the earth, with this certainty that creating a great champagne begins at the foot of the vine whose grapes are the very essence of wine. The terroir of Aÿ, a hillside village on the Reims mountain made up of 360 hectares mostly planted with Pinot Noir, has a wide variety of expositions and elevations. Aÿ is also the home of the esteemed house of Bollinger.
There are clay soils on the top of the hillside, chalk in deep and high areas, while colluvial deposits with deeper and less stony soils forms in the footslopes. This extraordinary richness of terroir give the wines an unrivalled representation of almost all the mineralities of Champagne, resulting in very complete wines: fresh and slender, fleshy and aromatic nuanced by a beautiful viscosity. With respect for the terroir of Aÿ, Collery assembles like a puzzle the wines from the different Grand Crus, meticulously selected for their aromatic qualities. The approach is based on blending and builds distinct wines that reflect the local grape varieties and the labor-intensive methods of Champagne winemaking.
Collery Blanc de Noirs has benefited from a long aging on lees before disgorgement allowing the Pinot Noir of which it is composed, 100%, to develop all of its aromatic potential and power. Even though it can be enjoyed as an aperitif, it will be perfectly in its place during a meal. Look for a golden hue with green highlights. Effervescence with fine bubbles forming a creamy ring. The first scents are intense with red fruits (raspberry, black cherry, red apple skin). Then elegant notes of toast and salinity are revealed. Fresh and expressive attack with notes of apple, pear, and honey. There is a nice persistence with the same aromas for the finish. 8g/L dosage, base of Pinot Noir matured in Burgundy barrels of 228L.
