This sums up the commitment and day-to-day work of Teresio Schiavi, heart and founder of Mirabella, and his two sons Alessandro and Alberto, respectively, Cellar Master and Marketing and Commercial Director of the business. Each of them, in fact, thanks to their specific competences working perfectly together, brings an expertise and an indispensable value to the company, allowing them to make Franciacorta wine with great personality, quality and modernity.
Franciacorta is known as Italy's 'champagne', made with the centuries-honored traditions used in the Champagne region of France. 'Edea' Franciacorta is a Blanc de Blanc DOCG made of 80% Chardonnay and 20% Pinot Blanc, 100% estate grapes from the villages of Paderno Franciacorta, Passirano, Camignone, Cazzago S.M., Provaglio d’Iseo and Rodengo Saiano. The soils are Glacial moraines and the average vine age is 26 years. All of the grapes are picked by hand, only healthy, perfectly ripe clusters, picked into small, aerated crates, during the first half of August, beginning with Pinot Blanc, then Pinot Noir, and concluding with Chardonnay.
The wine is aged a minimum of 24 months sur lie in the bottle, then a further 3 months following disgorging. The dosage is a brut style, with residual sugar not exceeding 5 grams/liter which is very low producing a bone dry, crisp, elegant Franciacorta. Deep straw yellow with gold highlights in color leading to delicate notes of yeast, citrus, and freshly baked bread marry to impressions of Golden Delicious apple, mineral and citrus with a masterful balance and refreshing acidity. This is very thirst quenching and paired very well with seafood.
