Sonoma is shaped by dramatic geologic activity—from an ancient landslide that changed the course of the Russian River to earthquake upheavals that redistributed entire mountaintops. The region’s incredible diversity of soil types and microclimates produces wines with velvety textures and bright, luscious flavors. Simi Cabernet Sauvignon reflects the best Sonoma Cabernet Sauvignon fruit which tends more toward blackberry and mulberry fruit, soft, ripe tannins, and a bit of spice to add interest. Look for ripe plum, black cherry and cassis with hints of vanilla in the nose with bright berry flavors spiced with cedar and black spice ending with elegant, lush tannins. Made of mostly Cabernet Sauvignon, with Merlot, Malbec, Petite Sirah, Petit Verdot and Cabernet Franc. Aged for 12-16 months in French and American oak, with up to 25% new oak. Serve with grilled strip loin with roasted mushroom jus, Moroccan spiced lamb shoulder with capers and preserved lemon, roasted venison with huckleberry sauce, or roasted pork with prunes.
